Seeni Sambol (Spicy and sweet Onion Sambol)
Onion fry which is Spicy and sweet at the same time
500g Red onions – sliced
100g Maldive fish – small pieces
4 cloves garlic – diced
ginger root – diced
3 tablespoons chili powder
1 tablespoon dry red chili pieces
cinnamon stick (2 inch)
cardamom pods – split
Some curry leaves
4 tbsp sugar
6 tbsp vegetable oil
2 tbsp lime juice
6 tbsp water
salt – to taste
1.Mix tamarind & water to make a thick paste, and keep it aside.
2.Then in a large bowl mix onions, Maldive fish, garlic, ginger, chili powder, red chili pieces, cinnamon , cardamom, and cloves) well and leave it for at least 15mins to season .
3.Heat the oil in in medium heat and fry the curry leaves, add the onion mix and fry it for nearly 10mins while continuously stirring.
4.When the onions are getting golden brown in color reduce the heat to low and add the tamarind paste and mix well.
5.Then add sugar while stirring. Turn off the heat and add the lime and salt to taste
